Chef Papa Diagne, more commonly known as “Chef Pap”, is the Owner and Chef of Joloff Restaurant, located in Bedford Stuyvesant, Brooklyn. Eponymously named after Joloff, Senegal and West Africa’s most popular dish, Joloff Restaurant has been serving the community for almost 20 years, and has taken a significant part in transforming the restaurant and surrounding environment into a “Taste of Senegal.” Each of Joloff’s customers has the opportunity to “break bread” at the table as a family and feast in the restaurant’s traditional dishes.
Pap has had the opportunity to cook for a wide range of clientele including the likes of: Kevin Powell, Sizzla, AKON, Talib Kweli, Mos Def, Erykah Badu, and M1, and Isaach De Bankolé. He and his restaurant have been featured in Daily News, the New York Times, the New York Amsterdam News, in Eat, and OCS News, as one of the best eats in Brooklyn.
“When I see people come and enjoy themselves eating Senegalese food, I feel very good because this shows that Senegalese food can be eaten and accepted by anybody anywhere in the world,” notes Papa. “As a Senegalese foodmaker, I feel that I have to represent my country one way or another. My customers are not just Senegalese, they are a mix, they come from different nationalities, and so we are a melting pot.”
